POMEGRANATE AND COCONUT INFUSED MOCKTAIL

Beat the summer heat with this seasonal mocktail thirst-quencher made with freshly squeezed pomegranate, coconut water, mint, zesty lime and a hint if ginger. It’s ridiculously refreshing!

Serves 4, 436 kJ per serve


INGREDIENTS

1 L coconut water

1 pomegranate, juiced

Handful mint leaves

1-2 cups of ice – extra for serving

1 tsp ginger, grated

1 lime, juiced


METHOD

1. Juice the pomegranate and place in cocktail shaker with 500 ml of coconut water, ginger, mint and 1 cup of ice. Shake and pour into a larger beverage pourer.

2. Repeat with remaining coconut water, ice and lime juice and shake. Add mixture to large beverage pourer.

3. Serve in individual glasses.
